Ingredients
  

  • 10 shots Aguardiente Llanero (Colombian anise liquor)
  • 6 whole Star fruits (Carambolas, plus extra slices for garnish)
  • Sugar to taste
  • Ice cubes

Step-by-step preparation
 

  • Wash the Star fruits (carambolas) thoroughly. Cut them into chunks, removing the seeds if preferred.
  • Place the fruit in a blender and process until smooth to create a concentrated juice. Tip: You can strain the juice through a fine-mesh sieve for a smoother texture, or leave it as is for a rustic feel.
  • Add sugar to the concentrated juice gradually, tasting as you go, until it reaches your desired sweetness level.
  • In a large pitcher or cocktail shaker, combine the Aguardiente and the sweetened star fruit juice. Stir or shake vigorously for 1 minute to ensure the flavors meld completely.
  • Fill cocktail glasses with fresh ice. Pour the mixture over the ice and garnish the rim with a fresh slice of star fruit. Serve immediately.
