The Cariaco Corn Arepas o maíz morado como también se le conoce son un alimento muy popular en la gastronomía caribe de Colombia, especialmente en La guajira; en esta sencilla receta aprende cómo preparar las arepas de maíz cariaco de forma fácil y rápida.

Ingredients
  

  • 1 pound dried purple corn
  • ½ cup grated cheese
  • 1 tablespoon of butter
  • Sugar
  • Salt

Step by step preparation
 

  • In a non-metallic cup, leave the corn and add water until it covers them; then it is left to soak overnight.
  • The next day, the corn is washed well, drained and ground.
  • To the resulting ground mass, add the grated cheese, butter, sugar and salt to taste; Stir everything very well until you achieve a mixture that can be easily molded; If you notice that the dough is too dry, you can add a little water.
  • Then you proceed to make the arepas with the dough, once you have made all the arepas you can proceed to fry or roast them as you prefer until they are golden brown.
