Ingredients
  

  • 2 lbs Pirarucú fillets Substitute: Halibut, Cod, or thick Tilapia fillets
  • 2 stalks Green onions scallions, finely chopped
  • 1 Green bell pepper finely diced
  • 4 tablespoons All-purpose flour
  • 2 Large eggs lightly beaten
  • Salt to taste
  • Black pepper to taste
  • Neutral oil for deep frying such as canola or vegetable oil

Instructions
 

  • Cook the fish: Place the Pirarucú (or your substitute white fish) in a pot of gently boiling water and cook until completely tender and opaque. Remove the fish, let it cool slightly, and shred or grind it completely using a fork or food processor. Place the mashed fish in a large mixing bowl.
  • Build the mixture: To the mashed fish, add the finely chopped green onions, the diced green bell pepper, the all-purpose flour, and the beaten eggs. Season generously with salt and black pepper to taste.
  • Mix and shape: Using a wooden spoon (or your clean hands), mix everything together thoroughly until it forms a cohesive, moldable dough. Scoop out small portions and roll them between your palms to form bite-sized balls (croquettes).
  • Heat the oil: In a heavy-bottomed skillet or deep fryer, heat a generous amount of neutral cooking oil over medium-high heat.
  • Fry to golden perfection: Carefully drop the fish balls into the hot oil in batches, being careful not to overcrowd the pan. Fry them for a few minutes, turning them occasionally, until they develop a beautiful, deep golden-brown crust.
  • Drain and serve: Remove the croquettes with a slotted spoon and let them drain on a plate lined with paper towels. Serve immediately while hot and crispy, accompanied by fresh lime wedges!

  • The Prehistoric Giant: The Pirarucú (Arapaima gigas) is a true river monster. It can grow up to 3 meters (nearly 10 feet) long and weigh over 200 kilograms (440 lbs)! Because it lives in oxygen-depleted Amazonian waters, it actually surfaces to breathe air.
  • Fish Substitutions: Since authentic Pirarucú is heavily protected and hard to export, you can easily replicate the meaty texture of these croquettes by using Halibut, fresh Cod, or even a very firm Grouper.
  • Make it a Meal: While traditionally served as an appetizer (pasabocas), you can make these croquettes slightly larger and serve them alongside coconut rice and a fresh side salad for a complete, satisfying lunch.
