  • 2 tablespoons Instant coffee
  • 1/2 cup Water
  • 1 packet Unflavored gelatin
  • 3/4 cup Sugar

  • Brew the coffee base: The very first step is to prepare a quick, strong instant coffee. Simply bring the 1/2 cup of water to a boil and stir in the 2 tablespoons of instant coffee.
  • Dissolve the binders: While the coffee is still piping hot, add the packet of unflavored gelatin and the sugar. Stir continuously until both the sugar and the gelatin are completely dissolved into the dark coffee liquid. Let it cool down slightly.
  • Whip the cream: In a large bowl, begin whipping the heavy cream. As it thickens, slowly pour in your cooled coffee, gelatin, and sugar mixture.
  • Aerate: Whip everything together vigorously for several minutes using a hand mixer or stand mixer until the mixture is completely unified, airy, and forms soft peaks.
  • Chill and set: Pour the whipped coffee cream into a large mold or individual serving cups. Place them in the refrigerator for a couple of hours so the gelatin can do its work and set the dessert.
  • Serve: Once you take it out of the fridge, you can lightly whip or stir it just a tiny bit with a spoon so it recovers its perfect, plastic-like creaminess before serving!
