  • 3 cups Ripe mango pulp
  • 1 cup Heavy cream
  • 4 Eggs
  • 3 tablespoons Unflavored gelatin
  • 1 cup Sugar

  • Prep the mango: The first step is to blend the ripe mango pulp until completely smooth. Pass the blended mixture through a strainer to remove any fibrous bits, and set it aside.
  • Beat the eggs: In a separate bowl, beat the egg whites until they form stiff peaks (punto de nieve). Gradually add the egg yolks and the sugar, beating continuously and slowly until everything is fully incorporated.
  • Mix the base: Dissolve the unflavored gelatin in a small amount (about 1/4 cup) of warm water. Mix the dissolved gelatin and the heavy cream into your strained mango pulp, stirring well until completely integrated.
  • Fold and chill: Slowly and carefully fold the beaten egg mixture into the mango base using gentle, enveloping movements to keep the batter airy. Pour the final mixture into a mold and place it in the refrigerator to chill for several hours.
  • Unmold and serve: Once the flan is completely firm and set, remove it from the fridge and carefully unmold it onto a plate. It is ready to serve! (Chef's Hack: If desired, you can drizzle the flan with a bit of crème anglaise right before serving for an elegant touch).
