  • 12 Fresh coconuts
  • 3 Liters water

  • Grate and extract: First, crack open and grate the flesh of all 12 fresh coconuts. Vigorously squeeze and press the grated coconut meat into approximately 3 liters of water to extract a rich, fresh coconut milk.
  • Boil and skim: Pour the newly extracted coconut milk into a large pot and bring it to a gentle boil. As it simmers, carefully skim off the thick, fatty cream that naturally rises to the surface and transfer it directly into a separate, clean pot.
  • Fry and strain: Heat the reserved coconut cream over the stove, essentially "frying" it in its own fat, until the milk solids begin to toast and separate completely from the pure liquid fat. Once the clear oil forms, strain it through a fine-mesh sieve or cheesecloth, and store the pure oil in clean glass containers.
