Insulso Tolimense Recipe
The insulso Tolimense is a wrap that serves as an accompaniment to many of the meals from Tolima and Huila. This wrap made from corn flour is part of a large number of dishes in the region. Learn here how to make Tolimense insulso quickly and easily.
Ingredients
- 1 pound corn flour
- 3 liters of water
- 1 large panela
- Cinammon sticks to taste
- Cloves to taste
- Guayabita (or toasted and ground dioecious pepper to taste)
- Roasted banana leaves
Step by step preparation
- First of all, cook the panela in water with cinnamon, cloves, guayabita or dioica pepper previously toasted and ground, optionally you can add some orange leaves, the idea is to make a panela water. You must constantly remove the foam that forms.
- Then add the corn flour to the aguadepanela and let it boil for 1 hour, stirring it constantly with a wooden spoon or a rocker, until it has a thick consistency.
- Then remove it from the heat, let it rest for a while and, with a spoon, place portions of the dough on the roasted banana leaves, arranged in squares. Then wrap very well and put them in the preheated oven at 250°F for 2 hours.

- Despite the “bland” name, this food has a very rich flavor, and is responsible for accompanying and balancing the flavors of many of the region's foods, such as suckling pig.
- The traditional recipe is usually prepared with ground corn, but little by little this has been replaced with corn flour for reasons of practicality.
- Typically, insults tend to have an elongated shape, but in other regions they tend to be triangular or elongated.
