Mermelada de Borojó: Colombian Borojo Jam

Ingredients
- 1 lb Borojo pulp
- 1 lb Sugar
Instructions
- Prep the fruit: If you purchased the whole fruit, the very first step is to wash and peel it. Extract all the pulp, blend it, and pass it through a strainer to ensure a completely smooth texture. (Chef's Hack: You can easily find ready-to-use, pre-packaged borojo pulp in many local markets to skip this extraction step).
- Simmer and thicken: Place the smooth borojo pulp and the sugar into a pot over the stove. Cook the mixture, stirring occasionally to prevent it from sticking to the bottom, until it reduces and thickens into a rich jam consistency.
- Cool and store: Once the jam has reached your desired thickness, remove the pot from the heat. Let it cool down completely before serving!
Notes
- Flavor Variations: While the base recipe is extremely simple, you can give the jam a distinctive aromatic touch by adding cinnamon, cloves, and a bit of fresh lemon zest during the cooking process.
- Preservation Tip: To properly preserve your homemade jam for a longer period, it is highly recommended to transfer it into a glass jar that has been previously sterilized with boiling water.
