Arepas de Ñame (Colombian Pacific Yam Arepas)
Ingredients
- 2 lbs White yam ñame blanco, ideally Chocoano
- 4 Large eggs Yolks only
- 1/2 lb Grated cheese A salty, firm cheese like Queso Costeño or Queso Fresco
- Salt to taste
- Plantain leaves (hojas de plátano), cut into squares and lightly greased with oil or butter
Instructions
- Cook the yam: Wash the yams thoroughly. Place them in a pot with boiling water and cook them with their skin on (con su concha) until they are completely soft and tender. Remove from the water, let them cool slightly, peel them, and mash them thoroughly until you get a smooth puree.
- Make the dough: In a large bowl, lightly beat the 4 egg yolks. Add the beaten yolks, the grated cheese, and salt to taste into the mashed yam. Mix and knead everything together until you form a cohesive dough.
- Shape the arepas: Take small, equal-sized portions of the yam dough and flatten them with your hands to form traditional, round arepa patties.
- Wrap in leaves: Take your pre-cut and lightly greased plantain leaves and carefully wrap each shaped arepa inside them. This will prevent sticking and add a wonderful aroma.
- Grill and serve: Place the wrapped arepas on a hot grill or griddle. Let them roast for about 20 minutes (flipping halfway) until they are heated through and take on a slight crust. Remove from the leaves and enjoy hot!
