Recipe for Santander Arepas or Yellow Arepas
Santander arepas or pelao corn arepas are a delicious culinary specialty originating from the Santander region, in Colombia. - 1 pound soft yellow corn
- 5 liters of water
- ½ pound of ash
- ½ cup of chicharrones
- 1 butter spoon
- Salt to taste
Step by step preparation
- The first thing to do is to cook the soft yellow corn in water with ash for around 30 minutes, with this the husk or skin that the corn has begins to come off (hence some call them arepas de pelao corn ). Then it is washed in a basket or sieve with plenty of water, then left to rest in cold water overnight.
- Then you must proceed to grind the corn together with the previously cooked and fried pork cracklings, after having added salt and butter. Then knead everything very well until you achieve a consistent and soft dough to shape the arepas. If necessary, you can add a little warm water to moisten and give elasticity to the dough. (You can also choose to buy the dough already prepared if you wish and skip steps 1 and 2 of the recipe).
- Then proceed to shape the arepas which should be about 0.5 cm thick. Once you have assembled them, proceed to place them on a pot or pan so that they are roasted until they are golden brown and toasted on both sides.
- And that's it, you can now serve them. A good tip when serving is to place them against the edges of the container in which they are served to prevent them from softening.

- If you do not want to take so much time in the preparation process, you can choose to buy the dough for the arepas already made, but the best way to prepare them is to follow the traditional recipe since it preserves a better flavor.
- Corn is a food rich in riboflavin, phosphorus, potassium, iron, calcium, zinc and vitamin B. Yellow corn especially has a high amount of vitamin A (carotenoids).
