Ingredients
  

  • 2 pounds dried shrimp
  • 4 cups of water
  • 1 pound of rice
  • 4 tablespoons of oil
  • 4 teeth of garlic
  • 1 bigheaded onion median
  • 1 segment long onion or chives
  • 4 chili peppers
  • 1 teaspoon of pepper
  • 1 1 teaspoon cumin
  • annatto or color also known as sauce
  • Salt

Step by step preparation
 

  • First we proceed to wash and prepare all the ingredients; The garlic, the medium onion, the long onion or chives and the chili peppers should each be finely chopped and kept until they are ready to be used.
  • Then proceed to peel the shrimp, separating the shells and hairs; You should cook all these shells and heads for 15 minutes in 4 cups of water so that they release all the flavor; Then he proceeds to strain it, leaving only the broth and lets it rest. (Optionally you can also blend the hot broth together with the heads and shells and then strain it).
  • Then proceed to sauté the previously chopped garlic, onion, chives and chili peppers in oil until you obtain a sauce, then add the pepper, cumin, achiote or color (also called salsita) and salt (all of these to taste). . All this mixture must be stirred well.
  • Then proceed to add the shrimp and the broth that was previously prepared to the sauce, leaving them boiling.
  • Once you see that the broth is boiling, add the rice, mix well and let it cook until completely dry.

Interesting Facts

  • If you cannot find dried shrimp, you can replace them with 3 pounds of fresh shrimp, and the broth can be obtained by cooking half a pound of shrimp or prawn heads in water.
