Chipi-chipi Rice Recipe

The Rice with chipi-chipi es un plato hecho a base de chipi-chipis (una especie de molusco que tiene presencia en muchas playas latinoamericanas), este plato es muy popular en la costa colombiana. Aquí aprenderás a preparar el Arroz de chipi-chipi paso a paso y de forma rápida y sencilla.

Ingredients
  

  • 1 Cup of rice
  • 2 cups of water
  • 3 pounds of chipi-chipi with their shells
  • ½ cup of hogao or stew
  • Salt (al gusto)
  • Pepper (al gusto)

Step by step preparation
 

  • The first thing is to prepare the ingredients, washing mainly the chipi-chipis with a lot of water; Once you have them all prepared, boil the chipi-chipis in water; They are left boiling until they open, which is around 10 minutes.
  • They are mixed well and then drained, those that have not opened should be discarded; The broth resulting from the cooking is strained to remove any traces of sand that the chipi chipis may have.
  • Then we proceed to shuck the chipi-chipis. Once done, they are put back into the broth.
  • In a separate pot, heat the stew, add the rice, salt and pepper, and cook for 10 minutes.
  • Then add the broth with the chipi-chipis and let it cook over medium heat for around 20 minutes, until it begins to dry.
  • Reduce the heat, cover the pot again and cook over low heat for 10 more minutes or until you notice that it is well cooked. It should be somewhat moist.
