Pigeon pea rice recipe

The arroz con guandú es un plato realizado a base de una legumbre llamada Guandú, este plato es muy popular en países latinoamericanos especialmente Panamá y en la región costeña de Colombia. Aquí aprenderás a preparar el arroz de guandú paso a paso y de forma rápida y sencilla.

Ingredients
  

  • 2 pounds of rice
  • 1 pound pigeon pea
  • 3 garlic cloves
  • ½ oil Cup
  • Salt (al gusto)

Step by step preparation
 

  • First of all, the ingredients are prepared, washing those that need it.
  • Once the ingredients are ready, proceed to cook the pigeon pea for 45 minutes or until you notice that it is soft.
  • In a pot proceed to prepare a sauce with the oil and garlic, then take the previously cooked pigeon pea and add it to the sauce along with eight cups of water, let everything boil, check that it has enough salt.
  • When it starts to boil, add the rice and let it dry.
  • Proceed to lower the heat to low, cover it and let it finish cooking for around 15 minutes.

  • Pigeon pea has between 18% and 25% of proteins and a high content of lysine and methionine, potassium, magnesium, calcium, iron and phosphorus, which provide great benefits to the body.
  • Other names for pigeon peas are: pole bean, bean, bean chícharo, palo de gandules or quinchoncho.
  • In Sibarco, a district of the municipality of Baranoa in the department of Atlántico, Colombia, the Guandul Festival is celebrated annually in January.
  • Other very popular dishes on the Caribbean coast of Colombia based on pigeon peas are: Guandú nickname, Sancocho de Guandú and the Guandú Sweet.
