Llanero Rice Recipe
Llanero Rice is one of the outstanding dishes of the Orinoquia or the Eastern Llanos; Its special point is the use of beef tail as the main ingredient. Learn in this simple recipe how to make Arroz Llanero quickly and easily.
Ingredients
- 1 ½ Pounds of rice
- 1 Beef tail cut into pieces
- 2 Tablespoons of lard (cochino) with color
- 2 large onions chopped
- 1 red paprika chopped
- 2 Tomatoes chopped
- 2 sweet chili peppers chopped
- 1 Garlic chopped
- Salt
- Pepper
Step by step preparation
- To start, you need to cut the beef tail into small pieces. Then, you must put 2 liters of water in a pot and put the tail to cook. Before this, you should season the tail with salt and pepper. Ideally, the tail should be tender and fall apart easily; this can take around 1 hour. It all depends on how tender the meat is, so you should be checking so that it doesn't overcook and dry out.
- Meanwhile, place the lard over low heat. Then, add two crushed garlic and two chopped onions. All this is left to brown very well and you must stir so that nothing sticks. Finally, add the chopped red peppers, chopped tomatoes and chili. At this point, cover the pot and leave it on low heat for about 10 minutes.
- When the tail is ready, measure the broth. Ideally, there should be 7 cups of broth but you can complete it with water if it does not reach the indicated amount.
- Once we have the tail ready, we put the broth in a pot and prepare the rice. You must wash this very well before and then put it in the broth. Finally, add the sautéed cola and vegetables to the rice and stir so that the flavors integrate. Once this is done, you must adjust the flavors with salt and pepper. When the flavors are good, you should cover the pot so that the rice cooks over low heat. Now all you have to do is wait for the rice to grow and not dry out too much.
- To finish, this preparation is served in a deep plate or soup bowl.
