Bizcochos de Cuajada Huilense: Colombian Fresh Cheese Biscuits
Bizcochos de Cuajada Huilense are a delicious, highly traditional specialty from the Andean region of Colombia, specifically hailing from the department of Huila. These exquisite little biscuits stand out for their incredibly soft, spongy texture and their unique, comforting, cheesy flavor that makes them ideal for any moment of the day.
The secret to this lightning-fast 20-minute recipe is the massive ratio of fresh cheese (cuajada) to cornmeal. By blending the fresh cheese with both pork lard and beef tallow, the dough achieves a perfectly rich consistency that bakes into a beautifully golden, melt-in-your-mouth snack!

Bizcochos de Cuajada Huilense (Fresh Cheese Biscuits)
A soft, spongy, and cheesy traditional snack from Huila! Made with a rich blend of fresh cheese curd, cornmeal, and traditional lards.
Ingredients
- 2 lbs Fresh cheese curd Cuajada fresca
- 1 ½ lbs Cornmeal Harina de maíz
- 2 Eggs Beaten
- 1/4 lb Pork lard Manteca de cerdo
- 1/4 lb Beef tallow Manteca de res
- Salt to taste
Instructions
- Make the dough: The very first step is incredibly simple. In a large mixing bowl, combine all of your ingredients: the fresh cuajada, cornmeal, beaten eggs, pork lard, beef tallow, and salt to taste. Mix and knead everything thoroughly to create a unified, consistent dough.
- Rest: Once the dough has reached a firm, workable consistency, cover it and let it rest for a few minutes.
- Shape the biscuits: Take small portions of the rested dough and shape the bizcochos with your hands. Traditionally, they are formed into small, slightly elongated ovals (about 5 cm long and 1.5 cm wide).
- Bake: Place the shaped biscuits onto a previously greased baking sheet. Bake them in a preheated oven at 400°F (200°C) for about 10 minutes. (Chef's Hack: Depending on the power of your oven, you might need to lower the temperature slightly to 390°F / 200°C and bake them for closer to 20 minutes. Just keep an eye on them and remove them once they are beautifully golden brown – bien doraditos!).
- Serve: Remove from the oven, let them cool slightly so they set, and enjoy!
