Bolitas de Coco: Coconut Balls

Bolitas de Coco (Coconut Balls)
A quick and elegant Caribbean party treat! Sweet, chewy balls made from freshly grated coconut and rich condensed milk.
Ingredients
- 1 Large fresh coconut
- 1 Can Sweetened condensed milk
- 1 tablespoon Butter
Instructions
- Prep the coconut: First, extract the meat (pulp) from the large coconut. Carefully peel off the brown skin underneath. Once the white pulp is perfectly clean, proceed to grate it finely. Set aside exactly one cup of this grated coconut to use later for coating.
- Mix and cook: In a cooking pot, combine the sweetened condensed milk, a touch of butter, and the remaining grated coconut. Place the pot over low heat.
- Thicken the dough: Let the mixture cook until it forms a homogeneous dough. You must stir constantly during the entire process, preferably using a wooden spoon. Once you notice the mixture has thickened beautifully and starts pulling away cleanly from the bottom of the pot, turn off the heat and remove it.
- Cool and shape: Transfer the hot mixture to a bowl and let it cool down completely. Once cooled, use your hands to form small, bite-sized balls. Roll each ball through the cup of fresh grated coconut you reserved in step one until fully coated.
- Chill: For the absolute best texture, place the coconut balls in the refrigerator for about 1 hour before serving so they acquire a firmer consistency.
