Cachaquillo: Passion Fruit and Coffee Cocktail
Cachaquillo is an inventive and highly energizing Colombian cocktail that masterfully blends the tropical tartness of passion fruit (maracuyá) with the robust, roasted kick of instant coffee.
The secret to this lightning-fast 10-minute recipe is blending the ingredients with just the right amount of ice to create a creamy, frothy texture, and serving it in an elegant glass rimmed with cinnamon and sugar. This rim perfectly balances the drink’s natural acidity and bitterness!

Cachaquillo (Passion Fruit & Coffee Cocktail)
An award-winning alternative cocktail! A creamy, energizing blend of passion fruit pulp, instant coffee, and sugar, served in a cinnamon-rimmed glass.
Ingredients
- ¼ lb Passion fruit pulp Maracuyá
- 7 tablespoons Instant coffee
- 7 tablespoons White sugar
- Ground cinnamon To taste
- Ice Enough to fill 1/3 of the blender
- 1 Lemon or Lime For rimming
Instructions
- Blend the base: The very first step is to add ice to your blender (filling about 1/3 of the pitcher). Add the passion fruit pulp, the 7 tablespoons of white sugar, and the 7 tablespoons of instant coffee. Blend on high until the mixture achieves a smooth, creamy consistency and a vibrant yellowish-brown color.
- Rim the glasses: Spread a mixture of white sugar and ground cinnamon onto a small, flat plate. Take the cut lemon and rub its juices around the entire rim of your serving glasses. Turn the glasses upside down and press them into the sugar-cinnamon mix to beautifully frost the edges.
- Serve: Pour the creamy blended cocktail carefully into the prepared glasses. Finish by garnishing the top of the foam with a small, elegant pinch of ground cinnamon, and serve immediately!

- Award Winner: This specific cocktail participated in the “Alternative Cocktails Contest” organized in 1998 by the Mayor’s Office of Bogotá under the “Rumba Sana” (Healthy Party) program, where it proudly took first place in the “Best Flavor and Aroma” category!
- Caffeine Warning: Because of the high instant coffee content, if you plan on serving more than three of these drinks to a single guest, it is highly recommended to substitute the regular instant coffee for a decaffeinated version to avoid caffeine jitters.
- Sugar Adjustment: Always taste or check the packaging of your passion fruit pulp before blending. If you are using commercially bought, pre-sweetened pulp, you should omit or drastically reduce the 7 tablespoons of white sugar required in the recipe to prevent the cocktail from becoming cloyingly sweet.
