The guava sandwich either bocadillo veleño es un delicioso dulce hecho a base de guayaba, es una de las muestras gastronómicas mas destacadas de los Santanderes colombianos, este dulce se ha convertido en un símbolo gastronómico de la región y en uno de los dulces preferidos de los colombianos.
Guava sandwich recipe
Aprende en esta sencilla receta como hacer un rico bocadillo de guayaba o bocadillo veleño de forma fácil y rápida.
Ingredients
- 3 pounds of ripe guavas
- 3 pounds panela or sugar
- 2 lemons
- 1 pizca of salt
- 3 liters of water
- 2 tablespoons of wheat flour (optional)
Step by step preparation
- The first thing you should do is wash the guavas very well, then cut them into several pieces and in a non-metallic container, bathe the guava pieces with lemon juice. You should let them rest for 2 hours.
- Then proceed to blend the guava quarters with enough water, then strain or sift the pulp and set it aside.
- Then you should look for a copper pan or a clay pot, or an enameled or Teflon pot, put it over medium heat with 3 liters of water plus the panela or sugar, here you will make a light syrup or melao.
- Then add the sifted guava and a pinch of salt; You should constantly stir the mixture to prevent it from sticking, until the candy obtains a thick consistency and is firm. (Something you can do to know if it is ready is to take a teaspoon and let it soak in cold water. If it becomes solid immediately it is because it is ready to be taken off the heat.)
- While it is still hot, pour the candy into a mold or refractory, then sprinkle sugar on top and let it rest until it sets or hardens.
- You can store it in a dark place, well covered for a better result.
- And that's it, you can now enjoy a delicious guava sandwich.

- If you want the mixture to thicken better, you can add 2 tablespoons of wheat flour or cornstarch.
- Guava sandwiches have become established as a symbol of Santander, and especially of the province of Vélez (hence the name Veleño sandwich), in this province there is a large industry around this sweet.
