La Macana: Traditional Colombian Sweet Colada

La Macana is a highly traditional, rich, and deeply comforting sweet dessert originally from the municipality of Salamina in the Caldas department. Closely resembling a thick, hot colada (pudding or porridge), this easy-to-make dish is the absolute perfect treat to warm you up on a very cold day in the Colombian Andes.

The secret to this rapid 18-minute recipe is slowly cooking crumbled sweet cookies into a rich base of milk, butter, and egg yolks. Stirred continuously over low heat until it reaches a beautiful, heavy consistency, it is a foolproof, decadent dessert perfect for a cozy night!

Ingredients

  • 2 Liters Milk
  • 4 tablespoons Butter
  • 4 Egg yolks from 4 whole eggs
  • 2 cups Sweet cookies galletas dulces, crumbled
  • 2 cups Sugar

Instructions

  • Prep the base: The first thing to do is prepare the base ingredients. From the 4 whole eggs, you will only need the yolks. Separate the yolks, place them in a bowl, and beat them well. Set them aside. Proceed to crumble or crush the sweet cookies into small crumbs.
  • Cook and thicken: Place a cooking pot over low heat and combine all the ingredients together: the milk, the butter, the beaten egg yolks, the crumbled sweet cookies, and the sugar. You must stir the mixture constantly while it cooks to prevent it from sticking or burning until it thickens into a heavy colada (pudding).
  • Serve hot: Once the dessert has achieved the desired thick, creamy consistency, remove it from the heat and serve it immediately while it is still steaming hot.

Notes

  • Regional Comfort: This dessert is an absolute staple in Salamina, Caldas, heavily consumed to combat the chilly weather typical of the coffee-growing mountainous regions.
  • Unique Pairings: While traditionally served hot on its own, it is extremely common to customize La Macana by topping it with fruit jams, a heavy sprinkle of cinnamon powder, or—surprisingly—even pairing it with savory salchichón (Colombian sausage) for a dramatic sweet and salty contrast!
