Receta de Mañoco o Fariña

El Mañoco o Fariña es una harina hecha a base de yuca brava o mandioca, este es uno de los platos tradicionales más antiguos de las Américas; originario de las culturas indígenas del caribe americano, en los llanos orientales de Colombia y Venezuela este alimento es parte de la alimentación casi diaria de los indígenas y muchas de las personas de la región, se prepara básicamente igual que como el casabe.

  • 3 Kilos of cassava brave (bitter)
  • Water

Step by step preparation
 

Preparation of the traditional Mañoco recipe

  • The cassava is extracted from the Cocuno or Konuko (Plot of land with cultivation, generally cassava), the soil and dirt are removed and it is transported in the catumare (artisanal basket).
  • It is washed with plenty of water and left to rest for three days in clean water.
  • The skin of the cassava is scraped with a knife or machete until it is completely clean and washed.
  • The entire cassava is grated until there is a mass of it and a kilo of previously grated cassava is added.
  • The dough is left to rest for two days.
  • Then we move on to the juicing process; This is made with the Sebucán (Indigenous tool for squeezing), here it is squeezed, removing all liquid and the yuré (poison).
  • Then the resulting dry dough is taken out of the sebucán and with a dough or machuca stone until it is converted into flour.
  • It is taken to the budare where it will be left for about an hour, during that period of time you must be stirring the flour at all times, after an hour it is removed from the budare and that granulated flour is the manoco ready to consume alone or as a side dish.
