Ingredients
  

  • 2 pounds hawthorn yam
  • 8 cups of water
  • ½ pound of Coastal cheese

  • 2 garlic cloves
  • 2 tablespoons of oil
  • 2 bleo leaves (optional)

Step by step preparation
 

  • First of all, the ingredients are prepared, the yam is washed, then the shell is removed and cut into large squares.
  • Then proceed to cook the yam in salted water over high heat for about 45 minutes, stirring constantly until the yam breaks down and the broth looks thick.
  • While this is happening, sauté in oil with the previously finely chopped tomatoes, onions, and garlic; Add cumin, salt and pepper to taste. Optionally you can add some chopped bleo leaves.
  • Then he Coastal cheese It is cut into small squares and added to the pot with the yam, the same as the sofrito, also added to the pot. Lower the heat and cook everything for 10 more minutes.
  • Then add the coastal serum, mix everything well and remove from heat.
