Ingredients
  

  • 4 cups rice
  • 2 pounds pork rib
  • 1 pound bacon
  • pounds chicken or hen
  • ¾ cup of vinegar
  • 2 tablespoons of oil
  • 3 Cups of hogao or homemade stew
  • pound of potatoes
  • 2 mature tomatoes
  • 2 bigheaded onions
  • 2 garlic cloves
  • 2 sweet chili peppers
  • 10 cabbage or cabbage leaves
  • 1 small jar of capers (optional)
  • Salt to taste
  • Pepper to taste
  • annatto or color to taste
  • bijao leaves

Step by step preparation
 

  • First, soak the rice with vinegar, oil, salt, pepper and annatto, and leave it in the sun for a few hours, stirring well.
  • Separately, in a pot, the pork ribs previously chopped into small pieces should be cooked over low heat, along with the chicken also previously cut into pieces, water is added and they are allowed to cook until they are soft.
  • In another pot, cook the potatoes, and prepare 8 to 10 cabbage leaves.
  • Once all the necessary ingredients are present, the cakes are assembled; first taking the bijao or banana leaves, placing them in the shape of a cross, on them place a little rice, the various meats, the potato, the onion slices, the previously peeled and chopped tomato, add crushed garlic, chili and some capers, to that mixture a little more rice is added and a cabbage leaf is also added, it is bathed with a little of the stew resulting from cooking the meats and then the cake is wrapped.
  • It is tied with pita or string and placed on a bed of leaves and stems in a pot with water at a level that covers them, adding salt and vinegar as well.
  • Cook everything for 20 minutes over high heat and then lower the heat to cook for 1 and a half or 2 more hours, adding hot water if necessary.
