Catfish Head Rungo Recipe

Ingredients
  

  • 3 pounds catfish head
  • 3 pounds black-headed beans soaked since the day before
  • 1 pound of cassava
  • 1 pound yam
  • 1 pound carrot
  • 1 medium red paprika
  • 1 ripe tomato
  • 1 slice of long onion or chives
  • 1 medium big onion
  • 1 head of garlic
  • 1 tablespoon of mustard
  • 2 tablespoons of oil
  • 1 splash of vinegar
  • Cilantro (al gusto)
  • Cumin (al gusto)
  • Salt (al gusto)
  • Pepper (al gusto)

Step by step preparation
 

  • The first thing to do is smoke the catfish heads in a pot over low heat, being very careful not to burn them because if they burn the rungo will become bitter. To prevent this from happening, you should move your heads constantly so that they receive the heat equally. (If you don't know how to smoke catfish heads, you may want to skip this step.)
  • The cassava and yam are washed, peeled and cut into pieces, the carrot is washed and cut into small cubes. The paprika, chives, and medium-sized head are finely chopped.
  • In a large pot, boil 7 liters of salted water, and there you cook the previously hydrated and washed beans.
  • When the beans are soft, add the carrots, paprika, garlic, cassava and yam to the pot, along with the mustard and seasonings to taste.
  • When the mixture is boiling, lower the heat to a simmer and add the smoked catfish heads. Let everything cook, stirring constantly to prevent it from sticking.
  • Separately, you should make a stew with oil, the big onion, the tomato and the vinegar.
  • Once you notice that all the ingredients are soft and that the fish heads have fallen apart, remove it from the heat and add the scallion and cilantro.
