Ingredients
  

  • 12 cups of water
  • ¼ pound de hígado
  • ¼ pound de riñón limpio
  • ¼ pound de corazón
  • 1 pound de pajarilla (bazo de res)
  • 2 long onion wedges
  • 1 tablespoon of cilantro
  • 1 cup of green peas (shelled)
  • ¼ pound de habichuela
  • 1 zanahoria picada
  • 8 papas pastusas medianas
  • 1 Cup of hogao
  • Salt (al gusto)
  • Pepper (al gusto)

Step by step preparation
 

  • Lo primero que debe hacer es lavar y picar todos los ingredientes; las cebollas largas y el cilantro deben ser picados finamente, las habichuelas las pica en rodajitas delgadas, la papa y la zanahoria las pica en cubos pequeños, el riñón y corazón los lava bien y los pica en trozos pequeños.
  • After washing the liver and the bird well, proceed to remove the membrane or cloth that covers them; then cut them into small squares or strips as you prefer. (if you don't like it or can't get heart or kidney, you can replace them with more liver and bird)
  • Then in a large pot, boil the water along with all the meats, the onion and salt and pepper to taste, plus the vegetables.
  • When you see that it is boiling, add the potato and let it cook over medium heat for 30 or 45 minutes, until it softens, but without falling apart.
  • When serving, add 1 tablespoon of hogao and sprinkle the chopped cilantro.

  • Liver is a food rich in choline, folic acid, purines, copper and natural cholesterol.
