Tripe paisa is a delicious soup that is very popular in regions such as the Andean and the Caribbean in Colombia, but especially in Antioquia. Ingredients
  

  • 1 pound tripe
  • ½ pound pig's hoof
  • ½ pound pork
  • 3 sausages
  • 14 cups of water
  • 1 long onion wedge (optional)
  • 2 concentrated chicken broth cubes
  • 4 bigheaded onions
  • 2 mature tomatoes
  • 5 garlic cloves
  • 3 potatoes
  • ½ pound of cassava
  • 3 tablespoons of oil
  • annatto or color to taste
  • 1 cilantro sprig
  • salt to taste
  • pepper to taste

Step by step preparation
 

  • First you must cook the tripe in a pressure cooker with enough water for 1 hour. You can add a slice of long onion to the cooking. When the tripe is soft, take it out and discard the water. (If I decide to prepare it in a normal pot, the time will be 2 to 3 hours).
  • Then proceed to cut the tripe into squares, as well as the hoof and pork.
  • You must prepare a hogao with the oil, 2 previously chopped onions, previously peeled and chopped tomatoes and a clove of crushed garlic. To this you must add the tripe, the hoof, the pork meat and the previously chopped chorizo. Let it sit for about 2 hours.
  • Once the 2 hours have passed, boil the water with the concentrated chicken broth cubes, the previously chopped onions and the remaining previously crushed garlic, add color or annatto, salt and pepper to taste. Let it cook for about 20 minutes.
  • Then you should add the meats, along with the previously peeled and chopped potatoes and cassavas, let it cook over medium heat for around 30 minutes or until you see that the tubers are soft and the soup has thickened a little.
  • Finally, sprinkle chopped cilantro and that's it, you can proceed to serve. It is popularly served accompanied by White rice, arepas and avocado.
