Recipe for Almojábanas Costeñas
Almojábanas costeñas are a delicious and traditional recipe from the coastal region of Colombia. Ingredients
- 1 cup pre-cooked corn flour
- 1 cup cornstarch
- 180 grams Coastal cheese
- 150 grams scraped or grated panela (or panela powder)
- 20 grams of butter
- 5 grams baking soda
- 200 ml of water.
- Anise to taste
Step by step preparation
- The first thing to do is preheat the oven to 200 degrees Celsius.
- Then proceed to mix the previously grated cheese with the cornstarch.
- Then we add the butter, the previously scraped panela and mix until we obtain a sandy mixture.
- Then add the pre-cooked corn flour, baking soda, anise to taste and proceed to mix everything very well.
- Little by little you should add the water until you achieve a dough that is a little softer than the dough that is regularly prepared for arepas.
- Once you have the dough, proceed to shape the almojábanas, which are generally shaped like a donut or doughnut.
- Then proceed to put them in the oven, for 5 minutes you should let them bake at 200 degrees then lower the intensity to 180 degrees for 5 more minutes or until they turn golden brown, generally they are usually left a little toasted.

- There are different versions of almojábanas depending on the region of the country where they are prepared, for example, there are huila almojábanas, the boyacenses, the vallunas, etc. And depending on the case, the recipes have their variations.
- Traditionally prepared with costeño cheese (see recipe here) but if you don't have or don't want to make this cheese, you can replace it with feta or another salty cheese.
