The mongo mongo es un dulce que se suele preparar tradicionalmente durante la semana santa en la costa de Colombia, en este dulce se suelen mezclar varias frutas que al final se transforman en un delicioso manjar.

Este dulce hace parte de los tradicionales dulces de semana santa colombianos, esta es una de las más bellas tradiciones en Colombia, consiste en que cada familia prepara dulces durante la semana mayor para compartirlos con familiares, amigos y vecinos.

Ingredients
  

  • 4 plátanos (maduros)
  • 3 green bananas (if desired, they can be replaced with ripe bananas)
  • 4 mangos (maduros)
  • 1 small pineapple
  • 1 small papaya (1 pound)
  • 6 guayabas (maduras)
  • 1 mamey grande (ripe)
  • 3 ½ pound panelas (or 1½ pounds of pulverized brown sugar)
  • 5 cloves
  • 1 large cinnamon stick
  • 5 granos de pimienta de olor (molidos)
  • Black pepper (al gusto)

Step by step preparation
 

  • First, the ripe bananas are peeled and the core is removed, that is, the central part where the seeds are.
  • Then the ripe bananas are ground with the green ones and set aside.
  • Then proceed to peel each of the fruits separately (pineapple, papaya, guavas, mamey and mango), once they are all peeled, grate or put each one through the blender (without mixing any) and set them aside.
  • Then continue with the panela which you should also grate and set aside.
  • Then, in a large pot, place the fruits that were previously grated or blended over high heat, along with the bananas, panela and spices (cloves, black pepper, cinnamon and ground peppercorns), with a spoon. of stick you must mix and stir everything.
  • When the mixture boils, lower the heat to minimum and continue cooking for a minimum of a day and a half, stirring constantly so that it does not stick or smoke. (If it is very difficult for you to do this process for a day and a half straight, you can turn off the flame and let the mixture rest overnight and start again during the day; there are mongo mongo that take up to 2 or 3 days to prepare.)
  • The candy will be ready when the mixture has a dark brown color and a very pleasant smell.
  • Y listo, se deja enfriar y se puede guardar en la nevera para consumirlo cuando usted lo desee, tradicionalmente se suele consumir acompañado de Coastal cheese either casabe.
