The Huilense lodge es una bebida que hace parte de los “preparados” que se realizan en el Tolima grande (Tolima y Huila), estos consisten en bebidas pre-hechas las cuales se conservan y solo basta con añadirles agua y una porción del preparado para poder disfrutar de la misma.

Ingredients
- 2 pounds panela
- 13 cups of water
- lemon peel zest
- cinammon sticks (al gusto)
- cloves (al gusto)
- Grated nutmeg (al gusto)
- 1 pound of corn flour
Step by step preparation
- Lo primero que deberá hacer es preparar un agua de panela, colocando a cocinar las panelas en 10 tazas de agua, cuando se encuentre hirviendo, le adiciona ralladura de cáscara de limón, canela, claves y nuez moscada al gusto.
- Additionally, you must dissolve the flour in 3 cups of water, then through a strainer, slowly add the boiling panela water, stirring constantly so that it does not stick. Continue cooking until you achieve a not very thick strain.
- Then proceed to take it off the heat and let it rest in a cool, shaded place to ferment for 2 – 3 days.
- And that's it, you can keep it in the refrigerator and serve it mixed with water whenever you like.

- The house and the guarruz are the two “preparations” that exist in the greater Tolima, the first is made with corn flour and the second with rice.
