Step by step preparation
 

  • First of all, the rice is cleaned, then it is washed, drained and placed to dry in the sun for 1 hour.
  • When the rice is dry, it is passed through the mill to obtain rice flour.
  • Then, place the water in a cauldron along with the salt to taste. When it is boiling, gradually add 10 tablespoons of the rice flour, being careful to stir continuously so that lumps do not form.
  • The resulting mixture is poured into a container and allowed to sit until set.
  • You should place the rest of the flour in another container with the mallet, make a hole in the center and place the previous mixture there, also add the Coastal cheese previously grated (if you don't have costeño cheese you can use normal cheese), continue kneading the mixture until you obtain a manageable dough.
  • Then create the arepas with said dough and fry or roast them until they turn golden brown.
