Los Quibbes o kibbe son una especie de frito muy popular en la costa atlántica de Colombia, este alimento tiene su origen en medio oriente pero debido a las migraciones sirio-libanesas ocurridas en el pasado hacia Colombia se han integrado a la cultura gastronómica del país.

Ingredients
  

  • 2 pounds ground beef
  • 1 bundle of mint
  • 1 pound American wheat (Place the wheat in a lot of water for 2 hours before using it)
  • 3 bigheaded onions
  • 1 cup of pine nuts (Si no consigue puede reemplazarlos por marañones secos o almendras tostadas, Si no consigue ninguno, realice la receta sin este ingrediente)
  • 2 tablespoons of butter
  • Salt (al gusto)
  • sweet pepper (al gusto)
  • Black pepper (al gusto)
  • Oil for frying

Step by step preparation
 

  • El primer paso será tomar varias hojas de yerbabuena y picarlas hasta completar 1 cuchara amplia.
  • Luego procede a mezclar 1 libra de la carne molida, junto con el trigo partido, 1 de las cebollas previamente picada, la yerbabuena, sal, pimienta de olor y pimienta negra al gusto, y se revuelven con un poco de agua fría.
  • Después se procede a moler la mezcla y se empieza a amasar bien esta masa resultante, luego toma varias porciones de la misma para formar unas bolas del tamaño aproximado de un huevo y les da una forma ovalada que termine en punta hacia los extremos.
  • Para preparar el relleno se empleara la otra libra de carne molida, la cual se mezclara con las cebollas cortadas previamente en tiritas, los piñones (si no consiguió piñones y los reemplazo con marañones secos o almendras tostadas, deberá triturarlos antes con un mortero), la mantequilla, la sal y la pimienta al gusto.

  • The quibbes have their origin in the culture of the Middle East, especially in the Lebanese culture, in those countries they are known as “kibbehs”, they arrived in Colombia due to the Syrian-Lebanese migration that occurred to the country in the last century, which allowed part of its culture to be integrated into that of Colombia, especially on the country's coast.
  • In municipalities and towns in the savannahs of Córdoba, Sucre and Bolívar they have become a very popular food.
