Rice in coconut milk recipe
The Arroz en coconut milk es sin dudas el acompañante mas primordial de muchas recetas tradicionales del caribe colombiano, esta presente en muchos platos, según la ciudad la preparación y los ingredientes puede variar un poco, en esta receta les presentaremos una variación muy tradicional usada en lugares como San Andres islands.
Ingredients
- 1 pound of rice
- 2 cups of coconut milk
- Sugar
- Salt
- 3 garlic cloves
Step by step preparation
- Place the coconut milk, sugar, salt and previously crushed garlic in a pot over low heat.
- When the cooking is boiling, add the rice and cover it with a banana or bijao leaf.
- Cook over medium heat until the coconut milk evaporates, then lower the heat and let it cook until the rice finishes drying.
Interesting Facts
- Cabe destacar que esta receta no es la misma del arroz de leche o el arroz con Coco costeño.
- Coconut milk does not have lactose, therefore, it can be a substitute for people who have lactose intolerance.
- Coconuts are rich in fiber, vitamins C, E, B1, B3, B5 and B6.
