El Bollo de Yuca o “bollo e yuca” como se le conoce en la costa es un amasijo hecho a base de yuca, es muy popular en la zona caribe de Colombia especialmente en departamentos como el Atlantic y Bolívar.

Ingredients
  

  • pounds of cassava
  • Salt (al gusto)
  • Ameros (corn cob gophers)
  • Majagua (whistle or string)

Step by step preparation
 

  • First of all, peel and wash the cassava, then cook it in plenty of water for about 20 minutes, so that it does not become too soft.
  • Once this time has passed, it is taken out and ground, then salt is added to this dough and we proceed to knead it.
  • Once this is well kneaded, you begin to assemble the buns with your hands, start by making a ball and then give it the common elongated shape of the bun, take the cob leaves (gophers or ameros) and wrap the bun with it, then with a majagua (pita or rope) carefully ties the bun tightly enough so that it does not spill, but not so tightly that it does not lose its shape.
  • Then proceed to cook them in salt water for ½ hour.
  • And that's it, this food is popularly served accompanied by a good Coastal cheese.
