Cerrero Coffee Recipe

Café Cerrero is a very black coffee without sugar; widely consumed in many regions of Colombia. Learn in this simple recipe how to make Café Cerrero simply and quickly.

Ingredients
  

  • 1 pound coffee beans (processed but unroasted coffee beans)
  • 1 panela
  • 2 cups of water
  • 6 cloves or sweets
  • cinammon sticks to taste

Step by step preparation
 

  • The first thing you do is roast the coffee seeds, in a large pan (a wide-based pan, it can be clay or metal), stirring with a wooden paddle until golden brown. To know if the coffee is well roasted, you bite into a bean, and if it breaks without much pressure, it is done. (Beans will reduce to 20% during roasting.)
  • When the coffee is roasted, add 1 panela melted in water, which will give off a lot of smoke. At that moment, add the 6 sweet cloves and the cinnamon sticks to taste. Immediately remove from heat and let cool.
  • Take the roasted and caramelized coffee beans, rub them between your hands until they are well coated, and grind them finely.
  • The resulting ground coffee is then packed in a jar to preserve its aroma.
  • The drink is prepared by adding ground coffee to boiling water, after which the contents are passed through a cloth filter. And that's it, you can enjoy this delicious coffee.
