Ingredients
  

  • 2 pounds soft yellow corn (cocido)
  • 2 panels
  • 2 cups of water
  • 5 eggs
  • ½ pound of butter

Step by step preparation
 

  • The first thing that is done is a panela water strong (diluting the panela in water), then the corn is ground, and to the resulting mass the panela water, the previously beaten eggs and the butter are added.
  • Knead the mixture very well, when everything is well integrated, proceed to make some balls with the dough, which are then stretched to form arepitas on a canvas.
  • Then the arepas are placed on a pot that is not too hot until they brown on one side, and they lie near the fire so that they receive the embers on the other side. (If you don't have the facility to make this recipe on a charcoal stove and with a clay pot, you can use a normal stove and a non-stick pan and simply roast the sands at the end in the pan)

  • These arepas are very traditional from the Santander area in Colombia, another of the very popular arepas in the area is the yellow arepa or arepa santandereana.
