Ingredients
  

  • 2 pounds of ocañera onions (if you can't find it, you can use regular red onions)
  • 4 garlic cloves
  • 2 cups of banana vinegar (if you can't find it, you can use normal vinegar)
  • salt (al gusto)
  • pepper (al gusto)
  • 1 glass jar

Step by step preparation
 

  • The first thing they will do is cut off the little head that the onion has, then they will remove the little shell that they have.
  • Then they will place them in the glass jar and then proceed to pour the banana vinegar, salt and pepper to taste and the previously ground garlic. (if you want you can also add color)
  • They leave it marinating for about 2 days. Once pickled, they take on a pale pink color.
  • And that's it, you can now enjoy this Ocañero delicacy.

Interesting Facts

  • Ocaña onions are a variety of onion much smaller than the normal one, which is usually grown in Ocaña, Norte de Santander, Colombia.
  • If you can't get these onions, you can use normal onions and use the core of them, the same with banana vinegar, if you can't get them you can use normal vinegar.
  • Ocaña onions have become a gastronomic symbol of Ocaña and Norte de Santander.
  • This pickle is usually consumed alone or to accompany soups, roasts and other dishes.
