Ingredients
  

  • 10 chili peppers
  • ¼ pound bighead onion
  • 2 long onion stalks
  • ½ cup of Castilla cilantro
  • 2 cups of vinegar
  • 2 tablespoons of lemon juice (or sour orange)
  • 2 tablespoons of oil (preferably olive)
  • Salt (al gusto)
  • Pepper (al gusto)

Step by step preparation
 

  • The first thing you should do is prepare the ingredients, after washing them well, you should finely chop the big onion, the long onion and the cilantro.
  • The chili peppers must be mashed (ground or crushed).
  • Then you must proceed to place the crushed chili peppers in the vinegar for a few hours, then take them out and marinate the onions and cilantro in the same vinegar, add the juice of the lemons (or sour oranges), the oil, salt and pepper to taste.
  • Then you can package it, this sauce can be kept for a long time if the container is well covered.
