Ingredients
  

  • 3 eggplants
  • 1 ripe banana
  • 1 red big onion (median)
  • 1 garlic clove
  • 1 cucharada de aceite de cocina
  • 1 lemon
  • Salt (al gusto)
  • Coastal cheese (optional)
  • pork crackling (previously fried) (optional)

Step by step preparation
 

Preparation 1

  • First of all, peel the eggplants and place them in a pot with water, salt and lemon juice on the heat for about 20 minutes. (The eggplants are cooked with salt so that they soften the bitterness, and with lemon so that they do not darken during cooking).
  • Then you must take them out, drain them and reserve them.
  • The banana should be cooked with everything and peel for 10 minutes in water that covers it, when it is soft it is removed, drained and left to rest.
  • In a container, place the eggplants and the previously peeled banana, then proceed to mash them with the help of a fork until there is a homogeneous puree.
  • Then you will proceed to sauté with the oil, the julienned onion and the finely chopped garlic, then add the puree made with the eggplants and banana to the sauté, and leave them cooking for about 10 more minutes.
  •  Optionally, you can add pork rinds previously cooked and chopped into pieces or Coastal cheese previously chopped into pieces.
  • And that's it, you can now proceed to serve it.

Preparation 2

  • The first thing you should do is roast the eggplants and ripe bananas on the stove over low heat or over charcoal, for about 10 minutes or until they are well roasted.
  • Then you must remove the skin and with the help of a spoon or fork mash them until they form a puree.
  • In a frying pan you are going to prepare a sauce with the oil, the previously finely cut onions and the finely chopped garlic, let them fry for a few minutes and add the puree that you have made with the eggplants and the one you have made with the banana, stir very well so that everything integrates.
  • Leave them cooking for a few more minutes and that's it.
  • Optionally, you can add pork rinds previously cooked and chopped into pieces or Coastal cheese previously chopped into pieces.
