Roasted goat recipe

Ingredients
- 1 leg of goat (or 3 pounds of goat rib)
- 1 bigheaded onion
- 1 garlic clove
- ¼ cup lard or cooking oil
- Cilantro
- Parsley
- Oregano
- Color to taste
- Salt to taste
- Cumin to taste
- Pepper to taste
- 1 beer
Step by step preparation
- Cut the meat into pieces and wash the goat meat well in order to remove that strong smell that it usually has; You can optionally wash it in water with salt, onion, cilantro, parsley and thyme or just with water. (leaves it submerged for a couple of hours).
- Meanwhile, you are preparing the marinade with which the meat will be marinated, finally chop the big onion, as well as the garlic, cilantro, parsley and oregano; then put them in the blender along with the beer, salt, color and cumin to taste. Proceed to blend them.
- Once you have the marinade ready and the goat meat washed, you proceed to marinate the meat, submerging it in the marinade and then leaving it in the refrigerator to keep it for 4 hours or overnight as you prefer.
- Since goat meat is usually tough, you should cook it after removing it from the marinade, you can do it in a pressure cooker with salt, garlic, onion and cilantro or with the same marinade where it was marinated, you should do it for half an hour.
- After they are cooked, let them cool, hydrate the meat with pork oil and a little marinade and proceed to put the pieces in the oven at a temperature of 350ºF, until they brown.
