Ingredients
  

  • 1 large beef tongue
  • 2 tomatoes
  • 2 bigheaded onions
  • 4 sweet chili peppers
  • 5 garlic cloves finely
  • 1 carrot
  • 3 tablespoons of fruit vinegar
  • 1 tablespoon tomato paste
  • ½ cup breadcrumbs or breadcrumbs
  • 1 teaspoon hot pepper
  • 2 teaspoons of cumin
  • 2 tablespoons of oil
  • Lemons

Step by step preparation
 

  • First you prepare the ingredients, starting with the tongue, with a kitchen mallet you hit the tongue to soften it a little, you can also do it with the edge of the knife if you don't have a mallet.
  • Then it is roasted to remove the skin that covers it, washing it well with lemon juice until it is white. This process can also be done by placing the tongue in boiling water for 10 minutes and then using a knife to help remove the skin, wash it with lemon and set it aside.
  • Then proceed with the other ingredients, in a container you must mix the onion, chili peppers, garlic, tomatoes, carrot previously finely chopped into very small pieces; add pepper, cumin and salt to taste.
  • He proceeds to poke the tongue, this means that several incisions or cuts will be made with the help of a knife. Once he has made several deep incisions, he introduces the vegetables into these cuts. When you have finished adding the vegetables, let them rest for 1 hour.
  • Then proceed to put the poached tongue on the fire in a pot with two and a half cups of water, let it cook for 2 and a half hours until it softens. If you use a pressure cooker, the process is shortened to 40 minutes or 1 hour from the beginning. moment when the water begins to boil.
  • When this time has passed and it is soft, it is removed and cut into several slices, set aside while proceeding with the next step.
  • In the pot where the broth was, add the tomato paste, oil and breadcrumbs, cook everything for 5 minutes and then add the tongue slices, let it cook for 2 more minutes and that's it.
  • It can now be served, traditionally on the coast it is usually served accompanied by White rice.
