Ingredients
  

  • 2 liters goat's milk
  • 2 panelas (1 pound) (o 2 libras de azúcar)
  • 2 lemons

Step by step preparation
 

  • Lo primero que debe hacer es cocinar la leche de cabra junto con la panela en una paila de cobre a fuego medio, debe revolver contantemente con una cuchara de palo hasta que la leche se comience a poner espesa y se desprenda por completo de la paila mientras se revuelve.
  • Then you should add the juice of the two lemons, and continue cooking until it completely curdles, the milk should become somewhat lumpy. (If you have trouble setting the mixture well, you can add ½ cup of cornstarch)
  • Then place the mixture in a damp metal container, spreading it well, and let it cool until it becomes solid.
  • Finally, you should cut in the shape of squares or diamonds as you prefer. These cuts are usually known as panelitas.
