Ingredients
  

  • 2 pounds very fleshy pork backbone
  • 14 cups of water
  • ½ pound wheat cuchuco
  • 4 tablespoons of wheat flour
  • ½ pound of savannah potatoes
  • 1 pound small Creole potato
  • ½ pound green peas
  • ¼ pound whole young beans
  • 3 long onion stalks
  • 5 cabbage leaves
  • 3 garlic cloves
  • Salt (al gusto)
  • Pepper (al gusto)

Step by step preparation
 

  • The first thing you do is cook the pork backbone in 14 cups of water, then add the wheat cuchuco, the chopped long onion and the crushed garlic. They let everything cook over high heat for about 45 minutes.
  • Then you must remove the backbone from the broth, and add to it the peeled and chopped sabaneras potatoes, the peas and the beans, and let it cook for about 15 more minutes.
  • Then you must add the Creole potato, the chopped cabbage leaves, salt and pepper to taste, wheat flour and the backbone previously cut into 8 portions.
  • Then cover it and let it cook over low heat for 20 minutes.
  • And that's it, you can now serve it.
