El guiso guajiro es un ingrediente primordial en muchas recetas de la gastronomía guajira la cuales provienen en su mayoría de la cultura indígena wayuu, este guiso es muy parecido a las salsas que se usan en otras partes de Colombia, como por ejemplo el rehash of the pacific, he chili pepper, he hogao que se usa mucho en la región Andina y otras preparaciones muy similares en diversas regiones de Colombia.

En esta sencilla receta aprende cómo preparar el guajiro stew de forma fácil y rápida.

Ingredients
  

  • 2 mature tomatoes
  • 2 white big-headed onions
  • 1 green paprika
  • 1 red paprika
  • 2 of garlic
  • 4 creole peppers
  • 1 tablespoon of vinegar
  • 1 teaspoonful annatto or color
  • 3 tablespoons of oil
  • Salt (al gusto)
  • Pepper (al gusto)

Step by step preparation
 

  • First, prepare all the ingredients by washing them well, and then proceeding to chop each one of them finely.
  • Once you have all the ingredients well chopped, you proceed to heat the oil and sauté the tomatoes, onions, peppers, garlic and Creole peppers in it.
  • When you see that the onion begins to become transparent, add the vinegar, achiote (or color), salt and pepper to taste and let it cook for 8 or 10 minutes.
  • Ready, this way you already have the base that is used to prepare many of the meats and fish in La Guajira, this preparation can either be done at the time of preparing these dishes or stored in a container in the refrigerator until when you need them.
