Aprende en esta sencilla receta como hacer un delicioso higadete de forma fácil y rápida.
Ingredients
- 1 pound fresh beef liver
- 1 white big onion
- 1 red big onion
- 4 tablespoons of oil
- 2 ripe bananas
- 1 green banana
- 5 creole peppers
- 1 long onion or chives
- 2 mature tomatoes
- 2 garlic cloves
- 1 concentrated meat broth cube
- 1 lemon
- 2 tablespoons of annatto oil or ½ teaspoon of annatto or color
- Pepper (al gusto)
- Cumin (al gusto)
- Salt (al gusto)
Step by step preparation
- The first thing you should do is prepare the ingredients, washing them first with water and proceeding to chop each one of them, cut the ripe bananas into squares, cut the green banana into several pieces, the white onion, the red onion, the tomatoes. and the chives are finely chopped and the garlic is crushed.
- You should wash the liver very well with water and lemon or sour orange if you prefer, then cut it into cubes and season it with salt, pepper and lemon juice.
- Then place the 4 tablespoons of oil in a frying pan and sauté the liver.
- Then add the onions, garlic, chili peppers and achiote, as well as salt, pepper and cumin to taste, let everything fry for about 3 minutes.
- Then you should lower the intensity of the heat and let it cook for about 10 more minutes until the mixture looks like a sauce.
- In a separate pot, prepare the concentrated broth cube in 4 cups of water. When the broth boils, add the sautéed liver and bananas. (If you wish, you can add cassava or chopped hawthorn yam)
- You should cook everything over high heat for about 15 minutes, then lower the heat to continue cooking until it is soft and the dish takes on the consistency of a thick soup.
- And that's it, you can proceed to serve.
