Ingredients
  

  • 2 pounds of bug octopuses (little ones)
  • 4 lemons
  • ½ cup of olive oil
  • ¼ cup of vinegar
  • 4 chive stems
  • salt (al gusto)
  • pepper (al gusto)
  • 1 red paprika (optional)

Step by step preparation
 

  • The first thing to do is to clean the octopuses very well, then they are beaten and washed with water and lemon, and they are left in that water for a long time.
  • Then they are cooked in normal water for about 20 minutes, then taken out and drained, chopped and left to cool.
  • They are left to marinate for a few hours in a glass or enameled container, in oil, vinegar, lemon juice, previously finely chopped chives, previously cut paprika into thin strips, pepper and salt to taste.
  • Traditionally served with White rice or on lettuce leaves, along with soda crackers. You can refrigerate it and keep it for a week.
