Ingredients
  

  • 12 cups of water
  • 1 pound large red beans
  • ½ pound de zanahorias (ralladas)
  • 1 green banana
  • 1 Cup of hogao
  • ½ pound de tocino o garra (chopped)
  • ½ pound de paticas de puerco (picadas)
  • Salt (al gusto)
  • Pepper (al gusto (opcional))

Step by step preparation
 

  • The first thing you should do is soak the red beans the day before, so that they soften. The next day, remove those that remain floating.
  • Then you must wash the hooves very well and cut them into several pieces.
  • Then proceed to cook the red beans in enough water to cover them, along with the bacon or claw (previously chopped), the pork hooves, salt and pepper to taste. If you will prepare them in a pressure cooker you should leave them for only 45 minutes, if you will prepare them in a regular pot you should leave them for 2 or 3 hours.
  • Then you must add the finely chopped green banana, the hogao, salt and pepper to taste. Mix everything very well and let them cook for about 10 minutes until the mixture thickens very well.
