Ingredients
  

  • 2 pounds ground beef (neck, paletero or lizard)
  • 1 pound ground pork (leg)
  • ½ pound bacon
  • 1 cup of breadcrumbs
  • 6 eggs
  • 1 long onion stem
  • 1 bigheaded onion
  • 2 garlic cloves
  • 2 bay leaves
  • Salt (al gusto)
  • Cumin (al gusto)
  • Pepper (al gusto)
  • Carrots (optional)

  • Raisins (optional)

Step by step preparation
 

  • The first thing you should do is prepare the ingredients, remove the skin from the pound of pork and chop it into small squares, chop the long onion, as well as the big-headed onion and garlic, which you chop finely.
  • Then you are going to mix the three meats, the ground beef, the ground pork and the bacon, then add the breadcrumbs, 3 of the previously beaten eggs, the onion, the garlic and the bay leaf; You will also add salt, pepper and cumin to taste.
  • Then proceed to mix and knead the entire mixture very well until all the flavors are very well integrated. You should let it rest for 30 minutes and remove the bay leaves. There are different methods for cooking meatloaf, so below we will explain what they are so that you can choose the one that best suits you.

Cooked meatloaf

  • If you want to make it cooked, what you will do is spread a clean canvas or cloth on a table, then you will spread a layer of meat mixture on it, on top you will place the three previously cooked eggs (that is, hard-boiled eggs), the carrots previously cut into sticks. , the cut beans and raisins, then cover with more meat mixture. Then he will proceed to give it a cylindrical shape, wrap it in the canvas and tie it to prevent it from falling apart, then he will cook it covered in enough water to cover it, for about 40 minutes.

Steamed meatloaf

  • If you want to steam it, what you will do is spread a clean canvas or cloth on a table, then you will spread a layer of meat mixture on it, on top you will place the three previously cooked eggs (that is, hard-boiled eggs), the carrots previously cut into sticks, beans and raisins, then cover with more meat mixture. Then you will proceed to give it a cylindrical shape, it is wrapped in the canvas and tied to prevent it from falling apart, then you will put it in a steamer, or on cobs or leaves in a pot with boiling water up to ¼ of its capacity, you should leave it cooking with steam for 40 minutes, you should check if the water I add is enough, if it is not enough, add more boiling water.

Meatball in mold

  • If you want to do it in a mold, what you will do is first grease and flour the container; Then you will assemble the meatball by spreading the meat and then placing the filling (boiled eggs, carrots, beans, raisins) and covering it with more meat mixture, then you must place a weight on the dough and place it in a water bath for 1½ hours.

Baked meatloaf

  • If you want to do it in the oven, what you will do is spread aluminum foil on a table, then you will spread a layer of meat mixture on it, on top you will place the three previously cooked eggs (that is, hard-boiled eggs), the carrots previously cut into sticks, the chopped beans and raisins, then top with more meat mixture. Then you will proceed to give it a cylindrical shape, wrap it in aluminum foil, leave everything well sealed so that it does not fall apart, then put it in the oven at 350ºF for approximately 1 hour.
  • Once the meatball is prepared, remove it from whatever method you used to cook it and let it rest, then proceed to cut it and serve it either hot or cold depending on your taste.
  • And that's it, this recipe is usually traditionally accompanied by potatoes or White rice. If you wish, you can reserve the meatball in the refrigerator for several days to eat it on different occasions.
