Banana Mazamorra Recipe

Ingredients
  

  • 8 ripe bananas
  • 1 Cup of rice
  • 1 large coconut
  • Cinnamon to taste
  • Sugar optional

Step by step preparation
 

  • First all the ingredients are prepared, the bananas are peeled, then they are split and the seeds are removed from the center, then they are cut into several small pieces.
  • Once done, the coconut is grated or blended to obtain a first milk, this is mixed with the rice and cinnamon and brought to the heat.
  • Water is added to the resulting coconut pulp and then squeezed or blended again to obtain a second coconut milk.
  • To the mixture that is on the heat, add the banana pieces and the second coconut milk in sufficient quantity so that it barely covers the other ingredients.
  • Cook everything, stirring continuously, until the bananas fall apart.
  • Then you proceed to remove it from the heat and add a little more coconut milk, add sugar if you want it to be a little sweeter, as well as cinnamon to taste.
  • It is usually served hot, but if you wish you can also serve it cold.
