Costeño Cheese Recipe

The Coastal cheese es un producto lácteo popular de la costa caribe de Colombia, se caracteriza por ser de color blanco, de textura blanda, ser fresco y de un sabor salado; es el acompañante preferido de los desayunos en la costa colombiana; Aquí aprenderás a preparar el queso costeño paso a paso y de forma rápida y sencilla.

Ingredients
  

  • 10 liters of pure milk (unpasteurized)
  • 150 grams rennet
  • ¼ pound of salt

Step by step preparation
 

  • First of all, place the pure milk in a large plastic bucket (container), add the rennet, stirring in a circular motion, and let it rest for 20 minutes.
  • After 20 minutes the milk has curdled. At that moment it should be stirred from bottom to top in order to eliminate the sweet whey, and let it rest for 10 more minutes.
  • Then with your hands you must collect the solid part, separating it from the sweet whey. You should put this dough on a tray, add the salt, stir it well and then squeeze it.
  • You can use a mold to place the cheese and squeeze it there to compact it. If the mold you use does not have holes through which the whey can drain, you must carefully tilt the container and, with the help of a spoon, remove the excess liquid.
  • Then proceed to cover the mold by placing a weight on top. You can use a lid or wood, and place something heavy on top, such as a large stone or another object that has a good weight.
  • Let about 6 hours pass and then proceed to remove the cheese from the mold.
