The Bocachico sancocho es una receta muy popular en la costa caribe de Colombia; preparado a base del bocachico uno de los peces más apreciados y consumidos de esta zona del país. Aquí aprenderás a preparar el Sancocho de bocachico con leche de coco paso a paso y de forma rápida y sencilla.

Ingredients
  

  • 4 fresh bocachicos
  • 4 garlic cloves
  • 4 green bananas
  • 4 pounds of cassava
  • ½ pound bighead onion
  • 3 pounds yam
  • ½ pound of tomato
  • 4 lemons
  • 8 creole peppers
  • 2 pounds of ahuyama
  • bleo leaves (optional)
  • 1 Cup of coconut milk
  • Salt (al gusto)

Step by step preparation
 

  • The first thing is to prepare the ingredients, starting with the fish, generally they are already purchased flaked and rolled; But in case they are not like that, what you will do is wash them well with water, remove the gills and viscera, you must be careful not to break the gall because the fish will be damaged. Then you proceed to roll them (make small vertical cuts on the side of the bocachico), break them into several posts (pieces) and add salt to taste.
  • Then proceed to prepare the other ingredients, in a pot add the garlic, the big onion, the tomato and the finely chopped chili peppers; The bananas, yams and ahuyama are cut into pieces and also added along with the lemon juice and bleo leaves (optional).
  • When you see that the tubers are soft, add the bocachico beans and let everything cook for another 20 minutes.
  • Then add the coconut milk, mix, lower the heat and let it rest for about 5 more minutes.
  • And that's it, proceed to serve the sancocho, either accompanied by White rice or alone.
