Ingredients
- 2 garlic cloves
- 1 bigheaded onion
- 2 long onion stalks
- 1 tablespoon of black sauce
- 1 glass of red wine
- ½ tablespoon of oregano
- 1 tablespoon of parsley
- 1 tablespoon of vinegar
- 2 pounds beef (leg, hip, broad loin)
- 2 pounds pork
- ½ Cup of water
- ½ pound threshed white corn
- ½ cup ground fresh curd
- 1 cup of raw rice
- ½ cup of green peas (tender and cooked)
- 2 large potatoes
- ½ pound sausage
- salt (al gusto)
- pepper (al gusto)
Step by step preparation
- The first thing you should do is let the corn soak two days before preparation, you must make sure that the water completely covers the corn.
- Once the two days have passed, wash the corn and cook it over medium heat in clean water for 1½. Once it is ready, let it cool, then proceed to drain it and pass it through the grinding machine in order to obtain a dough, add salt to taste, then stir with the curd until the dough obtains a homogeneous consistency and It reserves.
- Then in a small container you must prepare a marinade by mixing the previously crushed garlic, chopped parsley, pepper, vinegar and salt to taste, then pour this mixture over the meats, be sure to stir well to coat them, let them rest for 1 hour.
- Once that time has passed, proceed to put the meats with the marinade and water in a large pot over medium-low heat, cover and let it cook for about 40 minutes. Then they remove them from the heat without discarding the broth, drain them and finish browning them on the grill, bathing them with cooking juices. Then they proceed to chop and reserve the meats.
- Additionally, you should cook the rice, the peas and the previously peeled and chopped potatoes over medium-low heat in the meat cooking broth until you obtain a moist rice. You can let it cook for about 45 minutes. Then remove it from the heat and let it rest for a while, then mix the rice with the chopped meats, including the previously chopped sausage.
- Then you will proceed to grease the walls of a flat clay mold or clay or ceramic trough (if you do not have one, use a refractory one), then cover the bottom and the walls with a medium-thick layer of dough; then fill with the meat and rice mixture, and cover the top with more dough. Then he makes some grooves in the surface so that the cake can breathe during baking.
- Place in a preheated oven at 300ºF for 1½ hours.
